While the water is heating, take your desired mushrooms, clean them with tissue paper or a paper towel, and cut them into slices.

  1. Cutting of garlic and shallot:

Cut garlic and shallot into very small pieces. It should be noted that shallots are different from onions. If you don’t have shallots then, you can read our following section for further guidance.

  1. Cooking of Mushrooms:

Take a good-sized saute pan or skillet and turn on the flame. Now add chopped shallots, 2 tablespoons olive oil, mushrooms, and garlic to the pan. Mix well and cook until the mushrooms change their color.

  1. Addition of Salt:

When you notice that mushrooms are changing their color to brown, add a pinch of salt or as per your taste, and continue cooking. Cook mushrooms until you notice that mushrooms are cooked enough and the volume of liquid reduces ( i.e. liquid evaporates).

  1. Spinach Chopping:

Grab a cutting board and a chief knife and chop the spinach. If you have no experience in handling the chef knife, you can use an ordinary knife or simply grind the spinach in any grinder.

  1. Cooking of Pasta:

Also, it is important to preserve ¼ cup of water for future use.

  1. Add Spinach:

Add spinach on the top of mushrooms followed by adding cooked pasta along with 1/4th cup of water that we reserved earlier.

  1. Adding Shredding Cheese:

After adding water to make the spinach wilt, add shredded cheese to the pasta containing other ingredients. Mix well until the cheese melts and mixes with the other ingredients.

Note: Reserve a little amount of cheese for serving purposes

  1. Tada! You’re Done.

Grab a plate, pour the pasta, and top it with a little olive oil and cheese. And SERVE!

If you have no shallots available, then it’s okay. You can use mild yellow or red onions instead. The taste profile of shallots and red onions is the same. But shallots are a little bit more sweet and have a milder taste. Remember not to skimp red or mild yellow onions on the garlic.
